Duck, Duck... Duck.


The Underground Food Collective of Madison will be hosting a class on how to properly butcher, cook, and preserve a duck. The class will be held at the Madison Sourdough on Williamson Street at 6:30pm on Tuesday, June 22. Each participant will receive their very own duck (which you get to take home after class), and learn to make pate, confit, seared breast, stock and sausage.
